Suggestion #1 Quick Microwave Meals!
Let's keep it really simple at first (the vegan way) with a Mexican inspired bowl:
Bag of microwaveable frozen brown rice
Bag of veggies that steam in the microwave
Can of black beans
Salsa
Avocado
Corn Tortilla
Heat everything up and divide into microwaveable storage containers for later!
BUT WAIT!?
You don't like eating the same thing every day for lunch, right?
Honestly, I can't relate because I could LIVE off of beans and rice... But here are some recommendations to mix things up a bit.
Make it vegetarian instead of vegan by adding in:
feta cheese (or some other kind of high protein cheese like ricotta)
yogurt
Not vegan or vegetarian? Add some meat!
Rotisserie chicken (you can buy a whole rotisserie(cooked) chicken at most grocery stores.
Mix it up a bit with some substitutions!
Replace the rice with spinach or mixed greens and make it a salad with balsamic dressing!
Swap out the types of beans (pinto, kidney, mung, white, etc!)
Choose a different type of veggie or eat them raw! (carrots, broccoli, cauliflower, peas, corn and cucumber are great raw!)
Instead of salsa try different salad dressings or sauces (teriyaki, soy, bbq, etc)
Change the avocado for another type of fruit (apples, oranges, peaches, pears, or even a pre-made fruit salad)
Different vegan protein? no problem! Add some tofu, seitan, or tempeh.
